Heat @soy milk{350%ml} in a #small saucepan{}, then remove from heat. Mix @soy flour{4%tbsp} with @soy milk{100%ml}. #Whisk{} together the soy flour mixture and the warm @soy milk|milk{}. Season with @nutmeg{1%pinch}, @salt{1%tsp} and @pepper{1%pinch}. Combine the @&(~1)soy milk mixture{} and @bread{500%g} in a #large mixing bowl{}. Mix thoroughly and cover. Let soak for ~{15%minutes}. Meanwhile, skin and finely dice @onions{2}. Heat @oil{2%tbsp} in a #pan{} over medium heat and cook @onions{} until translucent. As the onions cook, wash and finely chop the @fresh parsley{60%g}. Heat salted water to boiling in a #large pot{}. Mix the @onions{}, @parsley{} and @&(2)bread mixture{} and knead until a dough forms. If the dough seems dry, add more @soy milk{} in small increments, until you can feel that most pieces of bread are no longer hard. Form the @&(~1)dough{} into @-dumplings{10}. Wet your hands and smooth the @dumplings{}' surface. Add the @dumplings{} to the boiling water and reduce the heat. Adding the @dumplings should reduce the water's temperature so that it is no longer boiling. We want to keep it that way! Cook for ~{15-20%minutes}. Remove @&dumplings from water. Serve directly or cover and keep warm in an oven.
